mixer過度打發所有材料時，麵粉『生筋』了，焗出來的蛋糕，就會實實的，而不是軟軟的！&lt;BR/&gt;其實，我做這個loaf沒有用電動mixer，只是用spatula拌勻材料就成。不知你有沒有焗過瑪芬muffin呢？道理一樣，根本不用mixer，只需要用手透過spatula輕輕拌勻，焗出來的muffin就會鬆，反而用mixer搞拌得過度就變實囉。&lt;BR/&gt;&lt;BR/&gt;分開乾的材料和濕的材料先拌勻，這樣就確保所有材料均勻，但又不需過度搞拌。麵粉就不會『生筋』。&lt;BR/&gt;&lt;BR/&gt;至於當你打開焗爐檢查蛋糕，蛋糕下陷，是因為溫度降了。其實，這種蛋糕是用自發粉，又不是用分蛋法，蛋糕應該不會升得很高，焗好後，又不會太下陷的。&lt;BR/&gt;&lt;BR/&gt;只要按食譜的步驟，預熱焗爐到適合溫度，到差不多焗好的時候，</summary><link
