除夕和新年剛過去,大家怎樣慶祝呢?在 facebook fan page 得知已有讀者做了那個鴨胸配香橙汁。基絲汀沒鴨胸了,之前吃了嘛。那隻光鴨就剩下兩條腿,一對翼,拿它們怎麼辦?2012年第一天,就煮這道梅子炆鴨腿做晚餐。煮完後,把每條腿斬開兩段,拍照後收拾殘局,回來就發現不見了一條半鴨腿,誰吃了?吓,還有誰呢?很難怪他,實在太惹味啊。當然大家可改用半隻或全隻光鴨去做這道菜,材料份量就按比例增加。

準備時間: 10 分鐘
烹調時間: 40 分鐘
分量: 2至3人

材料:
  • 鴨腿連鴨翼 2對 約485克
  • 薑片 4至 5片
  • 磨豉醬 1湯匙
  • 鹹水梅子(洗淨壓爛) 3粒
  • 300毫升
  • 老抽 1茶匙
  • 冰糖 20克
磨豉醬 Ground Bean Sauce

埋獻(勾茨):
  • 粟粉 1茶匙
  • 1湯匙
做法:
  1. 先把鴨腿和鴨翼洗淨,抹乾水份。放入平底鑊中,用中慢火煎至表皮微黃,並逼出油份。放在廚房紙吸去油份。
  2. 倒去鑊中的油,剩少許油在原鑊中。用大火爆香薑片和磨豉醬。下鴨腿和鴨翼炒勻。加水,老抽,梅子和冰糖,煮沸後,加蓋,用慢火炆煮至鴨肉軟稔,汁料收乾一大半,約40分鐘。拿走梅子核。埋獻,煮至喜歡的濃稠度,即成。

溫馨提示:
  • 鴨皮有很多脂肪。先用鑊煎香,逼出大部分油份,吃起來健康些呢。
  • 梅子(請參看此食譜中圖片)已有鹹味,因此不用落鹽。由於每個爐火力不同,如汁料水份發揮太快,但鴨肉未夠稔的話,中途可加酌量水分。
  • 這個梅子汁非常惹味,不但鴨肉美味,薑片也吸了汁料的精華,也非常好吃呢。因此,適合用不太老的薑片,纖維少些,吃起來更滋味。
  • 如果不想浪費那些鴨油(超市有鴨油賣,很貴呢),可以保留下來,用來焗馬鈴薯,增加風味。不過要快快用完,以免鴨油變質產生油膉味。

  4. Sigh my partner on a special diet now because of his skin...so i guess so duck for him...but this looks like a recipe my parents would love :) thanks for sharing! It's amazing how you're always able to cook up such traditional recipes in Australia!

    I got the fresh duck from Woolworths, salted plums from Yuen's. There's a butcher shop at Market Square, near a little flower shop, where you can find frozen ducks as well.

    did you make something special for australian day ?
    my hubby is a big fans of australia, he always call australia is his home even he is 100% luxembourgish. anyway, to give him a break on his diet, i will try to cook your duck leg with plums for him to celebrate the australian day ( few days behind),
    i couldn't arrange ground bean paste today, what will you suggest me to replace them with? thanks

    Oh, too late for replying to you. Sorry. Not any special cooking for Australian Day. I've got two banquets in that week already.

    Still can't think of anything that can replace ground bean paste for this dish. Pretty sorry.

    i did cooked the duck legs and my hubby and my girl both like it, a lot!!
    my girl already said they looks very yummy when i was cooking them... and she requested to have the rest for tonight again. i got yellow miso with me, so i have replaced the yellow bean paste this time, will try to look into the chinese store here see if i can get them for next time.
