上次煲百寶粥,剩了些鮮淮山(即山藥)。當然不要浪費。就隨手用來做小炒,鮮味有營。淮山做甜或鹹的菜式都很適合,真是好用。而且又有營養,有助保持血管彈性,降血壓和降血糖。它是不是很有營呢?順便複習一下怎樣炒幼嫩牛肉,大家想知道嗎?在食譜下面喔。

分量: 2至3人

材料:
  • 鮮淮山(去皮後) 150克
  • 牛肉 100克
  • 薑片 2至 3 片
  • 乾蔥蓉 1茶匙
  • 雞湯(或牛肉湯) 5湯匙
  • 紅辣椒 (切段,可以不加)½ 隻
  • 蔥段 少許
  • 鹽 酌量
醃料:
  • 生抽(醬油)1茶匙
  • 粟粉(玉米粉) ½ 茶匙
  • 糖 ½ 茶匙
  • 麻油 ½ 茶匙
獻汁:
  • 水 1湯匙
  • 粟粉 ½ 茶匙
  • 糖 ½ 茶匙
  • 蠔油 ½ 茶匙
淮山炒牛肉製作圖 Stir Fried Chinese Yam with Beef Procedures

做法:
  1. 鮮淮山去皮切厚片。記得要戴上手套。因淮山切後,會流出黏液,以免刺激皮膚。牛肉切片,用醃料拌勻,醃約 15分鐘,待用。
  2. 用中大火燒熱油鑊,下牛肉鋪平鑊中,彼此不重疊。煎炒兩面轉色,至 8成熟。盛起備用。
  3. 用原鑊爆香薑片和乾蔥蓉。加淮山炒勻。倒進雞湯,加紅辣椒(如果要的話)。加蓋煮至淮山熟透及開始軟身。牛肉回鑊,倒進獻汁,轉大火,煮滾後,灑少許鹽調味。加蔥段,即成。趁熱享用。

    1. Yes, I got it from a nearby Asian grocer here in Brisbane.

      Would any Asian grocers in your area carry frozen ones? Just wondering.

    2. No Christine. I have never seen it. neither have i seen any 鮮百合, 鮮海底椰, 粉葛. Perhaps different states import or grow different veg. Thanks for your prompt reply :) reading your blog makes me feel "closer" to hong kong (food) :p
